
A few nights ago Clinton and I made this yummy flatbread recipe. I posted pictures of it on Instagram and Facebook and everyone was begging for the recipe. It is super simple to make and it is the perfect summer dinner. We hope you enjoy!
Zucchini Basil-Lemon Flatbread
Serves 2
2 Flatbreads
1/2 to 1 cup Ricotta
1 Zucchini
Handful of cherry tomatoes
Garlic - fresh if possible
Orange Pepper
1 drop Basil Vitality
1 drop Lemon Vitality
Handful (or less) of Spinach
Sauté the Zucchini and Orange Pepper together with a drizzle of Olive Oil. Add a few dashes of salt and pepper.
Slice cherry tomatoes in half. Place in a small bowl and drizzle with olive oil.
In a small bowl Mix Ricotta, Minced garlic, 1 drop of Basil Vitality and 1 drop Lemon Vitality.
Place flatbreads on a baking sheet. Spread the Ricotta mixture onto the flatbreads. Add the Zucchini and Orange Pepper, Cherry Tomatoes.
Bake at 450 for 10-12 minutes.
Before serving, add spinach leaves, a drizzle of organic honey and a pinch of red pepper flakes.
Cut, Serve and Enjoy!
